Instructions
Dry roast above masala ingredients. Then roast onions until golden dark brown. Let it cool down all ingredients, grind all garam masala and then make roasted onion paste separately, Mutton/ goat masala is ready to use.
Instructions for Mutton/goat chops curry steps: Wash the mutton/goat chops 3 times in water. Take a pot, put 1 tablespoon of oil and put some chopped onion, ginger garlic paste, turmeric, some chili powder and salt and now add 1 cup water. Let mutton boil on medium heat for 45 minutes or pressure cook with 2 whistles. Take another pot, put remaining tablespoons of oil and add it to the pot. Let the oil be heated on medium heat, once oil is heated, first add mustard seeds and cumin seeds, then add crushed onion, let cook crushed onions until golden brown. Once the onion is golden brown add ginger garlic paste, cook for 4 minutes, now add red chili powder, turmeric powder, coriander powder, cumin powder and mutton/goat meat masala, and cook all this masala for 1 to 2 minutes, now add salt and 1 cups of water and let it cook for 3 minutes. Now add the boiled mutton/goat meat to it and again cook for 10 minutes. Add 3 cups of water to make a curry. Let it cook for 5 minutes.
Sukha Mutton/goat chops steps:Take another non-stick pan or wok to make sukha mutton/goat chops, add oil let the oil heat it on medium heat. Now add cumin seeds, mustard seeds, let it sputter. Add chopped onion cook it until golden brown, add ginger garlic paste cook it for 4 minutes, now add red chili powder, turmeric powder, coriander powder, cumin powder and mutton/goat chops masala, and cook all this masala for 1 to 2 minutes, add salt. now separate the mutton/ goat chops from curry and add it to this masala, now cook it for 7 minutes. Garnish with freshly chopped coriander leaves. Mutton/ goat chops sukha is ready to serve with lambi roti(nagpur special roti), chapati, puri, oil paratha, naan and steamed rice.
