Sauteed Amaranth Bhaji
Amaranth is green and red leafy vegetable. Also it is known as green chawli bhaji in Hindi and rajgira bhaji in Marathi. Amaranth is a good source of vitamin C, protein, amino acids, dietary fiber and minerals like magnesium, potassium, copper, calcium, phosphorus, zinc. Amaranth has antioxidants properties which can help reduce inflammation and cell damage. Amaranth comes under non-starchy vegetable category which is helpful in low carb diet.
Sauteed Amaranth Bhaji

Ingredients
- 1 no. Onion(cubed)
- 4 no Dry Red Chilies(deseeded)
- 2 tbsp Canola oil
- 1 tsp Salt(adjust to taste)
Instructions
- Cut leaves of Amaranth bhaji and wash 3 to 4 times with tap water and put it in strainer and keep aside. Meanwhile cut onion into cubes and dry red chilies.
- Take a wok or non-stick pot, put it on medium high heat. Add oil, let the oil heat. Add chilies and onion and sauteed for 2 minutes.
- Add washed amaranth leaves to onions and chilies.
- Mix amaranth leaves to onions and chilies with spatula.
- Turn and mix amaranth leaves every 2 minutes.
- Let the water dry from the amaranth leaves.
- Once the water is dry from the amaranth leaves, the sauteed amaranth bhaji is ready.
