Avocado Cashew Nut Cookies

Avocado Cashew Nut Cookies

Ingredients
- 1 no Avocado(puree)
- 1 tsp Lemon juice
- 1/3 cup Melted butter
- 2 no Eggs
- 2 cups Almond flour
- 1/2 cup Arrowroot flour
- 1/4 cup Oat flour
- 1/2 cup Brown sugar
- 1 tsp Baking powder
Instructions
- Take one fresh ripe avocado.
- Deseed and puree the avocado.
- Take 2 cups of almond flour.
- Take half cup arrowroot flour.
- Take 1/4 cup oat flour.
- Take 1/2 cup brown sugar.
- Take 1/3 cup melted lactose free butter.
- Take one bowl, add avocado puree and sugar.
- Take electric beater, beat the avocado puree and brown sugar.
- Add 2 eggs in avocado sugar puree, beat it again.
- Add melted butter and mix with beater.
- Add lemon juice.
- Add oat flour.
- Add almond flour.
- Add arrowroot flour.
- Add chopped nuts and chocolate chips.
- Fold all the ingredients and keep the cookie batter in freezer for 10 minutes.
- Meanwhile preheat the oven at 350 degree Fahrenheit. Line the baking tray with parchment paper. Take out the cookie dough from freezer and scoop the dough to parchment paper.
- Put one half of cashew nut on the cookie dough.
- Put the baking tray in oven and bake for 15 to 20 minutes.
- Take out the baked cookies on wire rack to cool down. Avocado cashew nut cookies are ready.
