Indian Long Beans Curry
Indian long beans curry is a healthy and fiber rich vegetable. There are many ways to cook Indian long beans, you can cook by itself or cook with potatoes or cook with brinjal and make a mix curry. It uses very minimal spices, yet this is very tasty curry. You can eat this long beans with chapatis, or you can eat as side dish along with dal, kadhi , rice and chapatis.

Equipment
- 1 Non- stick pot or pan
- 1 Measuring spoons
Ingredients
- 1 bunch Indian Long Beans
- 1/2 half Onion(cut into pieces)
- 1/2 half Tomato(cut into pieces)
- 1/2 tsp Mustard seeds
- 1/2 tsp Cumin seeds
- 1 tsp Red chili powder
- 1/4 tsp Turmeric powder
- 2 tsp Coriander powder
- 2 tsp Garam masala
- 1 tbsp Water(for cooking masala)
- 1 tsp Salt
- 3 tbsp Canola oil
- 1 cup Water(for cooking beans)
Instructions
- Wash Indian long beans and cut into small pieces.
- Take a nonstick pot, put it on stove on medium heat. Add 3 tablespoons canola oil, let heat oil. Once the oil is heated, add mustard seeds and cumin seeds.
- Once the onions are golden brown, add a teaspoon of ginger garlic coriander leaves paste. Cook ginger garlic coriander leaves paste for 1 minute until it is turns pale in color.
- Once the ginger garlic paste cooked, add red chili powder, turmeric powder, coriander powder, garam masala powder, and add one tablespoon of water cook for a minute.
- Add tomato and salt and cook for a minute.
- Add cut long beans to masala and mix well with masala.
- Mix long beans with masala and add a cup of water to it.
- Put lid on the pot and cook long beans for 20 minutes.
- Tasty long beans curry is ready.
