Ingredients
  

  • 200 gram Butter
  • 300 gram All purpose flour
  • 100 gram powder sugar
  • 1 no Egg(beaten)
  • 1 tsp Vanilla essence
  • 1/4 tsp Salt
  • 1/4 cup Cocoa powder
  • 3 tblsp Cranberry Jam

Instructions
 

  • Take one big bowl, add all purpose flour.
  • Take another bowl, add butter and powder sugar, cream it until it is creamy.
  • Add one beaten egg to the creamed butter and sugar and beat it again.
  • Add vanilla essence and beat it again.
  • Add all purpose flour to creamed butter, mix using cut and fold method.
  • Divide the butter cookie dough into half, keep half dough for making cranberry filled butter cookies and another half of dough for cocoa chocolate cookies.
  • Take cocoa powder and ad to the half of butter cookie dough.
  • Mix cocoa powder and butter cookie dough together.
  • Keep cocoa chocolate dough in fridge for 15 minutes.
  • After 15 minutes, take the cocoa chocolate dough out and roll the dough about 1/2 inch thick. Take cookie cutter and press it on the rolled dough and make cookie shapes. Keep the cut cookies in fridge for 15 minutes.
  • Meanwhile preheat the oven at 400 F. After 15 minutes, take out the cocoa chocolate cookies from fridge and lay it on cookie tray lined with parchment paper. Bake the cocoa chocolate cookies for 15 minutes. Cocoa chocolate cookies are ready.
  • Take another half of butter cookie dough. Take one tablespoon of dough and make dough balls. Take the flower shape cookie cutter and make shapes.
  • Make a impression in the center of the flower. Take cranberry Jam or reduction and fill the center of the flowers with cranberry jam. Bake cranberry filled butter cookies at 400 F for 15 minutes. Cranberry filled cookies are ready.

Ingredients
  

  • 3 no Apples
  • 1 tsp Cinnamon powder
  • 1/2 cup Brown sugar
  • 1 tbls Oil
  • 2 tbls Butter(for cooking apple filling)
  • 1 tbls corn flour(for slurry)
  • 1 tbls water(to make slurry)
  • 2 cups All purpose flour(for pastry dough)
  • 1/4 cup freezer cold Butter(for pastry dough)
  • 1/2 cup ice cold water(for pastry dough)
  • 1/4 cup freezer cold butter( to spread on to pastry sheet)

Instruction for Apple Filling

  • Take apples, wash with water and wipe it.
  • Cut apples into cubes and put it in water.
  • Take one pan, put it on medium heat. Add oil and butter. Let it heat.
  • Saute apples and let it soften for 2 minutes.
  • Cover the pan and let the apple cook for a minute.
  • Add cinnamon powder to soften apples.
  • Add brown sugar and cook it.
  • Cook apple and sugar.
  • Take one bowl, add some water and add corn flour and make a slurry.
  • Add corn slurry to apple and cook it for a minute.
  • Apple filling is ready for apple turnover.

Instruction for Pastry dough

  • Take 2 cups of all purpose flour.
  • Take freezer cold butter.
  • Add freezer cold butter to flour.
  • Mix butter to flour and add ice cold water as needed and collect the dough together.
  • Keep the pastry dough in freeze for 15 minutes.
  • Take the pastry dough out and roll into square sheet and spread freezer cold butter on to dough sheet.
  • Fold the butter pastry sheet into 3 parts and fold it over and make a envelope shape.
  • Roll the pastry sheet into rectangle shape.
  • Fold the rectangle shape pastry sheet into 3 folds and keep it in freeze for 15 to 30 minutes.
  • Wrap the folded pastry sheet with cling wrap and keep it in freeze for 15 to 30 minutes.
  • Take the pastry sheet out and roll it out again and fold it again and keep it in freeze, repeat roll and fold pastry sheet process 6 times.
  • After roll and fold pastry for 6 times, finally take the pastry dough out from freeze and roll it out into 18 inches long and cut into 8 equal square sheets.
  • Take one square sheet and make 3 small incisions cuts.
  • Take the square pastry sheet and fill it with apple filling.
  • Pull the incision part over the apple filling and close the pastry square sheet.
  • Take one fork, deep it into dry flour and make the design on the edges of the apple turnover pastry.
  • Take one bowl, crack the egg and add 1 tablespoon of water and bit the egg and make it to watery consistency. Apply egg wash to all apple turnovers.
  • Preheat the oven at 350 degree Fahrenheit. Put the apple turnover in the oven and bake it for 30 minutes.
  • Take the apple turnovers from oven and keep it on cooling wire rack.

Ingredients
  

  • 1 cup Basmati Rice
  • 1 cup Brown sugar
  • 2 lit water(change water everyday for 3 days)
  • 1/2 cup Ghee
  • 3 tbsp Poppy seeds
  • 3 tsp water for making anarsa dough
  • 1:1 cup Powdered rice and sugar, make dough balls without adding water.

Instructions
 

  • Take a pot, add one cup rice, wash with water and soak in water.
  • Every day change water and again fill pot with water and keep rice in water for 3 consecutive days.
  • After 3rd day, strain the water from rice. Keep rice in strainer and fan dry the rice until it is bone dry.
  • Grind the dried rice in grinder until it is fine powder.
  • Powdered rice.
  • Take one cup sugar, grind it in grinder.
  • Powdered sugar.
  • Take powdered rice, powdered sugar and mix all together.
  • Mix powdered rice and sugar until it binds together. Make rice sugar dough ball.
  • Keep rice sugar dough ball in airtight container for 2 days in dry, dark and cooler corner of the house kitchen.
  • Take one cup of rice sugar dough balls and crumble the dough. Add water as needed and knead the dough.
  • Pound the anarsa dough about 25 minutes, until it is smooth. Cover and rest the pounded anarsa dough.
  • Take one pan, put it on low heat, add ghee.
  • Take one teaspoon size anarsa dough and make a smooth circle ball
  • Take one plastic ziplock bag, cut the sides of it. Place the anarsa circle in between the bag.
  • Press the anarsa and make a small disk.
  • Take the anarsa off of the bag.
  • Take one plate, add poppy seeds to it. Roll anarsa in the poppy seeds.
  • Once the ghee is heated enough, put anarsa in ghee.
  • Baste the ghee on the anarsa.
  • When you see bubbles on anarsa that means anarsa is properly done.
  • Take on wire rack, put the rack on foiled tray, take out the fried anarsa and put it on the wire rack.
  • Anarsa ready to enjoy.
