Ingredients
  

  • 2 pound Indian Brijal
  • 1 no. Onion(small)
  • 1 no Tomato
  • 1/2 tsp Mustard seeds
  • 1/2 tsp Cumin seeds
  • 1 tsp Ginger garlic paste
  • 1 tsp Red chili powder
  • 1/2 tsp Turmeric powder
  • 2 tsp Coriander powder
  • 1 tsp Garam masala
  • 1 tsp Salt (or adjust to taste)
  • 1 cup Water
  • 4 tbsp Canola oil

Instructions
 

  • Take indian brinjal, wash, cut and put it in a bowl of water.
  • Take onion and tomato and cut them.
  • Take a pot, put it on medium high heat, add oil. Let the oil heat. Add mustard seeds and cumin seeds and let it sputter.
  • Add onions to mustard and cumin seeds. Let the onion cook to soft and golden brown.
  • Add ginger garlic paste, red chili powder, turmeric powder, corrinader powder, garam masala powder. Add little water so masala doesn't burn, and let it cook for a minute.
  • Add cut tomato to masala and let it cook until it is soft.
  • Add cut brinjals to cooked tomato and masala, mix it. Add water and salt. Cover and cook brinjal for 20 minutes.
