Curry-Jhol Momo

Momos are actually originates from Tibet and travelled to Nepal. Momos are made with chicken or vegetable or any other meat filling and wrapped in a dough. Jhol is basically a curry or soupy base which is made with masalas, tomatoes, chilies and garlic. Once the chicken Momos are steamed and shallow fried, dipped in curry or jhol and enjoy. Or you can enjoy Momos with Momo chatney.

Ingredients
  

  • 2 pound Ground Chicken
  • 1 cup Finely chopped onions
  • 1/2 cup Finely chopped coriander

Ingredients for Dry Momo Garam masala

  • 2 tbsp Coriander seeds
  • 1 tbsp Cumin seeds
  • 1 tbsp Fennel seeds
  • 1 tsp Fenugreek seeds
  • 1 tsp Mustard seeds
  • 1 inch Cinnamon stick
  • 10 pieces Cardamom
  • 5 pieces Cloves
  • 1/2 piece Nutmeg
  • 4 pieces Red chilies
  • 1 tbsp Kasuri methi
  • 5 pieces Curry leaves

Ingredients for Momo Curry(Jhol) Masala Paste

  • 1/4 cup Coconut flakes
  • 10 pieces Cashew nuts
  • 1 tbsp Poppy seeds
  • 1 tbsp Sesame seeds
  • 2 no Tomatoes(grind separately)

Instruction for Momo Dry Garam Masala

  • Take a plate and put measured garam masala in it.
  • Take one pan, put it on medium low heat. Add all garam masala and dry roast it.
  • Let the garam masala cool down. Take a grinder and grind the dry roasted masala into fine powder.
  • Momo dry roast garam masala is ready. Always keep excess leftover masala in zip lock bag or airtight container and freeze it for later use.

Instruction for Momo Curry(Jhol) Masala

  • Take a plate, measure the Momo curry(jhol) masala, dry roast the masala and keep aside for cooling.
  • Take a grinder and add roasted masala and water, grind Momo curry(jhol) masala into paste. Keep aside.

Instruction for Momo Filling

  • Take a ground chicken, add dry Momo masala and keep it aside.
  • Take a onion and finely chop it, Take half bunch fresh coriander and finely chop it.
  • Add finely chopped onion to the Momo masala marinated chicken and mix again.
  • Add finely chopped coriander leaves and mix again
  • Add oil into the chicken and mix again.
  • Add salt, mix well and keep the ground chicken Momo filling aside.

Instruction for Momo wrapper

  • Take a bowl, add 1 and 1/2 cup wheat flour and 1/2 cup Maida, 1/2 tsp oil.
  • Add 3/4 cup of water.
  • Mix together and knead the dough for 5 minutes.
  • Let the dough rest for 30 minutes. Make small dough balls.

Instructions for Making Moon Shape Momo

  • Take a small dough ball and roll it with rolling pin and make a Momo wrapper
  • Take a dough wrapper in the palm, add a chicken Momo filling and pinch the corner.
  • After pinching the ends, fold the excess wrapper and pinch again.
  • Again pinch and fold the excess dough wrapper and pinch again.
  • Do the pinch and fold technique until the moon shaped Momo.
  • Moon shaped, Momo are ready to be steamed.

Momo Steaming Process

  • Take a deep pot, Put it om high heat, add 6 cups water. Let the water boil.
  • Take a strainer, oil the strainer, put it on boiling water pot.
  • Lay the momo apart without touching each other in the strainer, cover and steam the Momo for 15 minutes.

Instructions for Curry(Jhol) Momo

  • Take a pot, Put it on low heat, add oil. Once oil is hot enough, add ginger garlic paste. Let it cook for 1 minutes.
  • Add curry(jhol) masala paste and cook it for 3 minutes.
  • Once the curry masala is cooked, add red chili, turmeric powder and red chilies. Let it cook for half minute.
  • Add tomato puree to the curry masala and cook it for 2 minutes.
  • Add water to the curry masala and cook for 3 minutes.
  • Add steamed and shallow fried Momo to curry(jhol), add 1 tsp dry Momo garam masala. cook it for 5 minutes on low heat.
  • Curry(Jhol) Momos are ready to plate it.

Instruction for Shallow fry Momo

  • Take a wok, put it on high heat, add oil. Once the oil is hot, add steamed Momo and shallow fry for 3 minutes.

Instruction for Momo Chatney

  • Take tomatoes, garlic, red chilies, and cumin seeds. Take one pan, put it on high heat and roast all ingredients. Keep it aside to cool it down. Take a grinder and grind until it is fine paste.
    Take another small pot, put it on medium heat, add one tablespoon of oil, once the oil is heated add mustered seeds, red chili and curry leaves and pour it on tomato chatney and add some salt to taste.
  • Serve shallow fried Momo with Chatney.
