Fish pockets are made with spinach, cheese stuffing, and baked in oven. It is healthy dish and different way of making fish. It contains very few ingredients, yet it is delicious.  Eating fish is healthy, it has many macros and micronutrients along with lots of omega-3 fatty acids which helps to reduce the cholesterols level.

I have used Salmon fish for the fish pockets. You can use any local fish which is debone and made into fish filets.

Ingredients
  

  • 2 lb Salmon fish filets
  • 1 bunch Spinach
  • 1/4 cup Cheese (here used vegan cheese), you can use regular cheese
  • 2 tbsp Canola oil
  • 2 tbsp Butter(here used lactose free butter), you can use regular butter.
  • 2 tbsp Cajun masala
  • 4 no Garlic cloves(grated)
  • 1 inch Ginger piece(grated)
  • 1 tsp Lemon juice

Instruction for fish

  • Take fish filet, wash with water 2 to 3 times. Wipe fish with paper towel or cloth.
  • Make a pocket in the center of the fish. Keep it aside, meanwhile prepare the stuffing and masala.

Instruction for Stuffing and Masala

  • Take bunch of spinach, wash and keep it in a strainer.
  • Chop spinach in a chopper.
  • Keep chopped spinach aside, meanwhile prepare masala.
  • Cajun Masala.
  • Oil and butter.
  • Cheese.
  • Lemon juice.
  • Take non-stick pan, put it on low medium heat. Add oil and butter.
  • Add grated ginger and garlic, saute for 1 min. Add spinach and saute until water evaporates.
  • Add Cheese into sauteed spinach, turn of the heat.
  • Let it cool down spinach cheese stuffing.

Instruction for Baking fish pockets

  • Left over Cajun masala for fish filet.
  • Mix Cajun masala in remaining oil and butter. Apply Cajun mix to one side of fish filet.
  • Apply Cajun masala to other side of fish filet.
  • Take one fish filet pocket, stuff the fish pocket with spinach and cheese. Fill all the fish pockets. Meanwhile preheat toaster oven at 350 degree Fahrenheits.
  • Tap and close the fish pockets.
  • Spinach and cheese stuffed fish pockets are ready to be baked in toaster oven.
  • Put the stuffed fish pockets in oven and bake for 30 minute, flip after 15 minute to other side.
  • Baked fish pockets are ready in 30 minutes.
