Ingredients for Boiling Goat Mutton

  • 1 no Medium finely chopped onion
  • 1 tsp Ajwain or celery seeds
  • 1 tsp Coriander leaves or parsley leaves
  • 1 tsp Turmeric powder
  • 1 tbsp Biryani Masala
  • 2 tbsp Canola oil
  • 4 lb/pound Goat mutton

Ingredients for Boiling Basmati Rice

  • 1 tbsp Canola oil
  • 1 tbsp Ghee or Butter
  • 7 no Green Cardamom
  • 5 no Cloves
  • 4 no Bay leaves
  • 2 tsp Black cumin or Shahi jeera
  • 8 cups Basmati Rice
  • 4 liter Water(bring to boil)

Ingredients for Preparing Mutton for Biryani

  • 1/2 cup Warm milk
  • 1 tsp Saffron strands
  • 2 no Sliced onions(fry onions)
  • 5 no Green Chilies
  • 1 bunch Mint leaves
  • 1 cup canola oil(for frying onions)
  • 1 tsp Ginger garlic paste
  • 3 tbsp Biryani masala
  • 1 tbsp Homemade garam masala paste
  • 1 tsp Salt to taste
  • 1 tsp Red Chili powder
  • 1/2 tsp Turmeric powder

Instructions for Boiling Goat Mutton

  • Take 4 lb or pounds goat mutton and wash 3 to 4 times with water.
  • Take one plate and add biryani masala, turmeric, ajwain or celery seeds, coriander or parsley leaves, one finely chopped onion, and salt.
  • Take one pot, add oil let the oil heat up on medium heat. Add all masala and fry for 1 minute.
  • Add washed goat mutton, mix all masala with mutton.
  • Cover the pot with lid and cook mutton for 10 minutes. After 10 minutes check on mutton, once the water is released from mutton, if need add one cup of water.
  • Put the lid on and cook mutton for 30 minutes.

Instruction for Boiling Basmati Rice

  • Take one plate, add 7 green cardamom, 5 cloves, 4 bay leaves and 1teaspoon black cumin or shahi jeera.
  • Take basmati rice and wash with water. Soak the rice in water for 5 minutes. After five minutes drain the water out and keep the rice on strainer.
  • Take one pan put it on medium heat, add oil and ghee. Let it heat the oil and ghee. Add Whole garam masala, let it fry for 2 minutes. Add basmati rice and toast for 5 minutes. Mean while boil the water.
  • Take one pot, add 4 liter water and bring it to boil.
  • Once the water boils, add toasted rice and boil for 2-3 minutes until andante.
  • Once the rice is boiled, drain the water and put the water on wire strainer.

Instructions for Preparing Mutton for Biryani

  • Take a Bowl, add half cup of warm milk, soak saffron strands in the milk.
  • Keep saffron milk aside.
  • Take one pan, put it on medium heat. Add cup of oil, let the oil heat hot. Add the sliced cut onions and fry until golden.
  • Take one pan, put it on medium heat. Add fried onions, add ginger garlic paste. Cook the ginger garlic paste for 2 minutes.
  • Add homemade garam masala paste and biryani masala and cook for 3 minutes
  • Add all prepared biryani masala to the boil goat mutton. Fry the goat meat in masala and keep it aside.

Instructions for Layering Dum Goat Mutton Biryani

  • Take one wok, add first layer of biryani masala coated goat meat at the bottom and add 1/4 cup warm water and top with boiled basmati rice.
  • On Second layer again add biryani goat mutton and basmati rice.
  • On Third layer again add biryani goat mutton and basmati rice.
  • On Forth layer, add remaining goat mutton and remaining basmati rice.
  • Add fried golden onions, green chilies and mint leaves on last layer of biryani.
  • Add saffron milk on layered biryani.
  • Put the lid on the wok. Seal the biryani wok with aluminum foil.
  • Take one griddle and put it on medium heat and preheat the griddle.
  • Keep aluminum sealed wok on preheated griddle, let the form some water vapor on the wok lid, then reduce the temperature to low and dum the goat mutton biryani for 10 minutes.
  • After ten minutes, Goat mutton dum biryani ready.
