Puran Poli

Puran Poli, is a Maharashtra delicacy. It is basically sweet stuffed flat bread. It is made from chana lentils and sugar cooked together and mashed into smooth paste. This sweet lentil mixture is then put it in a flour dough and flatten it with rolling pin or with hand and fry on the tawa with some ghee. Puran poli is very tasty and is a healthy dish. It has Iron, fiber, complex carb, protein, all these nutrients come from chana dal, sugar, flour, ghee and nutmeg powder and cardamom powder.

Ingredients
  

  • 2 cups Chana Dal
  • 3 and 1/2 cups Water
  • 1/2 tsp Salt
  • 1 cup Brown Sugar
  • 1 tsp Nutmeg powder
  • 1 tsp Cardamom powder
  • 1/2 cup Ghee(Clarified butter)

Ingredients for flour dough

  • 1 and 1/2 cup Whole wheat flour
  • 1/2 cup All purpose flour
  • 1 cup Water

Instructions
 

  • Take 2 cups chana dal also called chana lentils. Wash with water.

  • Take a cooker, add washed chana dal and add 3 1/2 cups water, salt.
  • Close the lid and pressure cook the chana dal.
  • Add brown sugar to cooked chana dal and cook for 5 minutes.
  • Mash chana dal with potato smasher into fine paste, add nutmeg powder and cardamom powder.
  • Keep mashed chana dal aside.

Instruction for flour dough

  • Take a 1 and 1/2 cups wheat flour and 1/2 cup of all purpose flour.
  • Add 3/4 cup of water and collect the dough together, if need take 1/4 cup water and add gradually until the dough is smooth.
  • Knead the dough for 7 to 10 minutes. Let the dough rest for 15 minutes.

Instruction for making puran poli

  • Make the dough balls and keep it ready to make chapati cover for puran poli.
  • Take one flat board, put dough ball on it.
  • Take a rolling pin and flatten the dough.
  • Roll the flatten dough into dry flour both sides.
  • After dusting dry flour, roll the dough and make thin chapati.
  • Take puran and put it on the chapati.
  • Flatten the puran on chapati.
  • Faltten puran dal and cover 3/4 part of chapati
  • Fold over the first edge of chapati on puran.
  • Fold over second edge of chapati on puran.
  • Fold over third edge of chapati on puran.
  • Fold over fourth edge of chapati on puran.
  • Sprinkle dry flour on folded puran stuffed chapati.
  • Roll puran stuffed chapati very lightly with rolling pin.
  • Flatten the stuffed chapati as thin as possible with with rolling pin.

Instruction for cooking puran poli

  • Take tawa, put it on medium low heat. Once tawa is hot enough, add rolled puran poli on tawa. Cook one side for 1 to 2 minutes.
  • Once the puran poli cooked, put teaspoon of ghee on it.

  • Flip puran poli and add ghee to other side as well.
  • Once puran poli is done, take one chapati box, line it with parchment paper and put puran poli in a box.
