Yakhni Pulao in Instant Pot
Yakhni is a Persian word meaning stock or broth. Yakhni pulao is a very delicious rice pulao which is cooked in mutton or lamb stock also known as yakhni. Either you can cook whole garam masala spices with mutton or lamb stock or you can fry basmati rice in the spices and add yakhni to toasted rice and cook yakhni pulao in instant pot. Since this flavorful pulao has lamb stock which makes this dish protein rich.

Ingredients
Garam Masala Ingredients
- 2 tbsp Rasins
- 5 no Green Cardamom
- 2 no Brown Cardamom
- 2 inch Cinnamon Stick
- 1 no Star Anise
- 2 no Bay Leaves
- 1 tsp Fennel seeds
- 1 tsp Cumin seeds
- 1 tsp Corriander seeds
- 1/2 tsp Pepper corns
For Lamb Yakhni
- 3 pounds Lamb
- 1 liter Water
- 4 cups Basmati Rice
- 1 no Onion
- 3 no Green chilies
- 3 tbsp Canola oil
- 1 tbsp Butter
- 1 tsp Salt(or adjust to taste)
- 1 tsp Ginger garlic paste
- 1 tsp Turmeric powder
Instructions
- Wash lamb with water. Take a pot, put it on medium heat. Add one tablespoon oil, tablespoon onion, ginger garlic paste, turmeric powder, let it cook for a minute. Add washed lamb pieces, salt, water and cook until it is tender. In about 40 minutes lamb yakhni will be ready for pulao.
- Take another pot, put it on medium heat. Add canola oil and butter. Let the oil heat, add onions, green chilies, whole garam masala and sauted for 2 minutes.
- Add basmati rice and toast it in a whole garam masala for 5 minutes.
- Put the toasted basmati rice in instant pot and add yakhni.
- Put the lid on to instant pot and set the timer ON to Rice settins.
- Once the timer goes off to zero hours mode. Let it cool down the instant pot. Take out the yakhi pulao in a bowl.
